SWALLOW TAIL

For food and wine lovers, Swallow Tail collaborates with local experts from chefs to mushroom hunters to create unique culinary experiences and educational foraging events, taste the wild side of British Columbia.

We’d love to create a custom gourmet experience for your group; company nature and culinary retreats, wedding celebrations, birthdays and reunions. Our activities range from underground dining at the secret supper club in Vancouver to a sea foraging adventure on the beach with a local fisherman. 

ROBIN KORT

Chef/Sommelier/Forager/Owner

In a lifetime of cooking on the unceded territories of the Musqueam, Squamish and Tsleil-Waututh Nations in Vancouver, BC, foraging chef Robin Kort has learned to gather and cook an abundance of delicious wild plants, mushrooms and fresh seafood weaving them into her culinary repertoire. Her passion is sharing the bounty of the Pacific Northwest with you through in person foraging and cooking classes with her company Swallow Tail. Her underground supper club and pop-up dining events are legendary in the Vancouver food scene, from her decade running traveling tasting event, Secret Supper Soiree to last years sold out Eat the Invaders charity gala. Chef Robin has been featured on the Food Network, Time Magazine, CBC, Montecristo Magazine, Vancouver Magazine, the Huffington Post, Conde Nast Traveller and the Globe and Mail and has authored the popular “Coastal Forager’s Cookbook”. She hopes to connect people from wilderness to plate revealing delicious treasures from the forest to sea and passing on her love of nature through the food she creates.

Chef Robin has worked to create culinary events with some of the cities best chefs from Chef Bruno Feldeisen beloved judge on TV’s, The Great Canadian Bake Off, Michelin starred Chef Andrea Carlson of Burdock & Co, to culinary pioneers in sustainable cuisine like Chef John Bishop, and star chefs like Tushar Tondvalkar of Kavita.  Her sommelier studies were under the wise Barb Phillips (Master of Wine) and she’s eaten and cooked her way around the world.   Chef Robin is a member of the Vancouver Mycological Society and has been running wild mushroom foraging trips and cooking classes for over a decade.  Swallow Tail was created to unite these passions; cooking, drinking, foraging, friends and the great outdoors.   Chef Robin has been interviewed on the Food Network with Bob Blummer, CBC with Steven Quinn, Montecristo Magazine, Vancouver Magazine, the Huffington Post, Conde Nast Traveller and the Globe and Mail and has authored the popular “Coastal Forager’s Cookbook”.
