Salmon Secret Supper

Is salmon one of your favourite fish? This is the supper for you and all your pescatarian friends! Master of the sea, Chef Erin Vickars, celebrates the most regal fish in BC with a lavish six course feast at the Swallow Tail secret Supper Club in Vancouver. This is a one time pop-up menu, tickets will sell fast so catch them quick!


Saturday November 25th, 2017

1st course – Coho – Cured & cold shaved. Fresh cream, wild sheeps sorrel, lemon ice

2nd course – Sockeye – Wild caught, pickled daikon, citrus juice, chili

3rd course Pink Salmon – Humpback, fire roasted, egg yolk, alliums

4th Course – Steelhead – Cold Smoked, lovage, grapefruit, Melba

5th course – Ivory Salmon – Stone fruits, intertidal veg, buckwheat

6th CourseWild Berry Financier – Pine pollen, underbrush tips, cultured cream
